Salty feta cheese and sweet honey make an irresistible combination. In this modern meze, feta is crusted in sesame seeds, pan-fried till golden, then served hot with a drizzle of honey.
INGREDIENTS
1 slab real Greek feta cheese, about 8 oz (225g)
6 tablespoons all-purpose flour
1 egg
8 tablespoons sesame seeds
4 tablespoons olive oil
2 tablespoons honey (or to taste)
METHOD
Cut the slab of feta into four equal pieces. Place in the freezer while you prepare the remaining ingredients.
In three separate bowls, lay out the flour, beaten egg, and sesame seeds. Remove the feta from the freezer. Dip each feta piece in egg, flour, egg again, then sesame seeds. Ensure with each dip that all sides are covered.
Heat the olive oil in a small frying pan (cast iron is great for this recipe!) over medium high heat. Once the oil is hot and shimmering, add the feta. Brown on all sides, turning carefully, about 2 minutes per side.
Serve the sesame feta fingers immediately with a drizzle of honey.
